Eating clean and healthy is simpler than it seems. Portion control and fresh ingredients are key to limiting calories. A short 30-minute walk after meals will help to reduce your blood sugar levels.
I made a quick Mediterranean-inspired meal for two, with leftovers for one.
Here’s what I used:
- 3 raw chicken tenders, cut into small pieces
- 1/2 large red onion, sliced
- 1 small zucchini, sliced
- 1 small yellow squash, sliced
- 4 Campari tomatoes
- Olive oil (I use “Sizzle”)
- Tuscan seasoning from Victoria Gourmet
- Salt and pepper
Cook the wild rice in a rice pot for 30 minutes.
Mix the chicken, onion, zucchini, squash, and tomatoes in an air fryer. Shake halfway through. Cook on the chicken setting until the chicken is cooked through and the vegetables are tender. The tomatoes add acidity; if you don’t like them, add a squeeze of lemon juice.
Add a 1/2 to 2/3 cup scoop of wild rice to your bowl, then add the vegetables and chicken.
This made three lunch-sized portions.
You can switch up the veggies to whatever you have on hand. Green beans, bell peppers, mushrooms, and onions are a great combination. For extra spice, add red pepper flakes or for an Asian flair add hoisin sauce, fresh garlic and ginger.
